As you can tell from my video, I’m a major fan of silicon baking cups.  I’ve used them for years for sweet, savory,  store bought mixes, and homemade gluten free goodies.  My daughter even used them for quality control purposes in a science fair project several years ago.

My first experience with silicone bakeware was not so great.  I bought a whole set of deep dish type of pans at an outlet mall.  Gluten-free cooking was still pretty new to me and I quickly learned that it was NOT a good combination.  Of course, back in those days I had not discovered Xantham Gum either.  My baked goods were heavy, never rose, and never seemed to cook throughout.  I think it was just a bad combination all the way around.

Several years ago, a neighbor bought me a set of Wilton Silicone Baking Cups.  As you can tell from my video, I was less than pleased with them.  They stained, burned, and scorched.  My daughter left them with food sitting in them in the sink while I was away for a few days and they molded.  The mold is one of the things that stained the cups.  I would NEVER leave anything in these cups to serve because they look dirty.  I wouldn’t want to eat from them if I were a guest, they just look nasty and dirty.  Needless to say, I’m less than pleased.

A few years ago, I found a cute little set of silicone baking cups at one of the local dollar places.  It must have been a Valentine’s thing since they’re all pink, red, and white.  They’re extremely thin and like the first set of silicone baking cups, they  scorched and stained.  Because they’re so thin, they rip and tear really easily.  You do get what you pay for.

Last month, I was selected to review the Rainbow Wave Kitchen 24 pack Silicone Baking Cup set. I was hopeful that they would be better than the other two sets I already owned.  Upon arrival, I was a bit nervous.  They were a medium thickness compared to the other two sets I owned, right in the middle of the two.  I was afraid they would be too thin to do a good job.

I was pleasantly surprised when my first batch of muffins were baked.  Neither of my other two sets of silicone baking cups releases the food cleanly from the cups.  It doesn’t matter if I try as soon as they’re removed from the oven or if I’ve allowed them time to cool, they’ve never really released the food cleanly.

As you can see in the picture at the top, the Rainbow Wave Kitchen 24 pack Silicone Baking Cup does neatly release food from the cup.  This was immediately after I had taken the muffins from the oven, no more than a minute had passed.  After the muffins completely cooled, and the muffins were taken out of the baking cups, they looked like they were clean from my cupboard (oops – I forgot to take that picture).

Of course, there is no comparison between the Rainbow Wave Kitchen 24 pack Silicone Baking Cup and a paper baking cup.  I can never get my baked goods out of a paper baking cup without leaving a bunch of it stuck to the paper.  Ready to eat more of your food and throw away less?  Time to get a set of Silicone Baking Cups by Rainbow Wave Kitchen.
