Pumpkin Spice Cake and Carrot Cake Muffins are just a couple of the great new treats I’ve baked up to share for Thanksgiving.  In case you can’t tell, I’ve got a great big Good Cook Turkey Platter hidden below all of those muffins and cupcakes.  All of those yummy goodies were baked up in some fabulous new Nonstick Good Cook Bakeware that I recently received.  If you’re interested in receiving some new bakeware or the turkey platter, make sure to read all the way to the bottom.  It will be well worth your time!

I MUST start this post out with a shout-out to my friend and a teacher I greatly respect.  Without my friend, Stephanie W., I would have worked so much harder coming up with a recipe for my latest Good Cook challenge, “Something, Something Pumpkin” and may have had no luck finding fresh pumpkin to use for my Homemade Pumpkin Puree post.   I had several friends who graciously shared their pumpkin recipes with me (thanks Julianna and Katie K.), but Stephanie’s won because it was so stinking easy to make her Pumpkin Spice Cake and Cupcakes!

My daughter is extremely picky and she even loved how these came out.  She was chomping at the bit to eat them because they simply smelled so fabulously while they were cooking the Pumpkin Spice Cake and Cupcakes.  Our house smelled like Christmas instead of Thanksgiving though because this was the second cinnamon based recipe that we cooked last night and it was oh so yummy smelling!

If you can shop, you can put together my Pumpkin Spice Cake or Cupcakes if you prefer.  I did make my own Homemade Pumpkin Puree, but Stephanie has always used store bought.  Since I was using fresh, homemade puree, I didn’t need to add any water, but she said she always has to add water to hers.  She gave me this great recipe as word of mouth and said her mom had given it to her.  These are some of the best recipes, don’t you agree?

Pumpkin Spice Cake
Ingredients
  • 16 oz. Pumpkin Puree (Homemade or canned)
  • Spice Cake Mix
  • Cinnamon Chips (sold with Chocolate Chips)
  • Water (if needed)
Instructions
  1. Preheat oven to 350* F.
  2. Add all ingredients to a mixing bowl.
  3. Stir.
  4. Add up ¼ to ½ cup of water if needed to thin the mixture to a cake batter consistency. The Homemade Pumpkin Puree has plenty of water in it naturally.
  5. Bake 25 to 30 minutes or until a fork or toothpick inserted into the cake comes out clean. You may want to test a few different places. Hitting a cinnamon chip can make the fork come out sticky and gooey, making you think the cake isn't cooked through.
  6. Cupcakes take less time to cook.
  7. Small holes in the top of the cake are normal. They're formed by the cinnamon chips bubbling when cooking.

Like most home cooks, I’ve owned a variety of nonstick cookware over the years.  As a matter of fact, my very first wedding present was a set of nonstick bakeware.  Well, that’s what the box said anyway.  I’ve own many different brands of different shapes and sizes over the years, some claiming nonstick, some not.  However, I’ve never owned any that came with a Lifetime Guarantee like many pieces in the Good Cook line do. Some are even guaranteed not to rust!

Each of the pans comes with attached instructions.  The instructions recommend handwashing and drying to help them last longer.  The use of metal utensils is acceptable, but high temperature nylon, silicon, and wood are recommended for maintaining the finish longer.  The use of knives should be avoided and will void the warranty.

It was pretty neat when I flipped the cake over onto the plate.  My daughter and I actually heard the cake separate from the pan as it plopped onto the plate.  It was almost like a suction cup release.  Yep, we’re obviously kitchen geeks!  I figured that with this sticky gooey Pumpkin Spice Cake that the pan would be a mess to clean up.  As shown in the picture, the cinnamon chips were stuck all over the bottom of the pan.  I also dripped batter all over the muffin pan as I filled my muffin cups.  Clean up was a breeze though.  I literally just wiped everything down with a damp, soapy rag and they were perfectly clean.  These are truly nonstick pans!
