Cobb Salad on a Bun

If you’re a fan of Cobb Salad, then you’re sure to be a fan of  my Cobb Salad on a Bun.  I love cooking and eating all of the great fresh fruits and vegetables this time of year.  I love it even more when I can gather them from my own garden.  This yummy Cobb Salad on a Bun actually started with a trip out to my little veggie patch where I gathered Butter Crunch Lettuce, Romaine Lettuce, and Spinach.  Next, I found some an Avocado, Roma Tomatoes and Cheddar Cheese in the fridge.  With a little further digging, I found a recently grilled chicken breast in the freezer.

I realized that I had most of the makings of a great salad, but salad didn’t sound good.  What I really craved was a burger or some other something on a bun that I could sink my teeth into while I held it in my hands.   While I dug around in the freezer, I found a grilled chicken breast, and my sandwich came together.  While I really love a nice, fluffy onion roll, I haven’t found one that is gluten free.  What I did have in my freezer was a bag of Udi’s Gluten-Free Bagels.  Of course, any type of bagel, bun, or roll would for this Cobb Salad on a Bun.

It wasn’t until this plate of yumminess was consumed that I realized I had missed one ingredient that I won’t forget again, BACON!  How could I have forgotten the bacon?!?  Everything’s better with bacon!  There is no doubt that I won’t forget the bacon the next time I make my Cobb Salad on a Bun.  Of course, a traditional Cobb Salad is made with blue cheese.  It will also be used in place of Cheddar Cheese the next time I make this sandwich.  Not sure about heating and melting  the blue cheese?  It makes it even richer and enhances the flavor.  Think I forgot to include a dressing?  I didn’t.  The avocado was so smooth and creamy that nothing else was needed.

Cobb Salad on a Bun

If you're a fan of Cobb Salad, then you're sure to be a fan of my Cobb Salad on a Bun. This is an easy to make salad turned sandwich for easy eating at home or on the go.
Ingredients
  • Udi's Gluten-Free Bagel or other Sandwich Bun
  • Cheddar or Blue Cheese
  • Salad Greens - Butter Crisp and Romaine lettuce, Spinach
  • Roma Tomato
  • Avocado
  • Grilled Chicken Breast
  • Fried Bacon Slices
Instructions
  1. Fry bacon and set aside.
  2. Toast bun with cheese on one side, using toaster oven.
  3. While bun is toasting, heat chicken breast. Wrap in wet paper towel if microwaving to keep moist.
  4. Slice in long, thin slices going with the grain of the meat.
  5. No need to tear or shred lettuce or spinach leaves. Fold large leaves in ½ to fit better on bun.
  6. Slice tomatoes lengthwise from top to bottom for long, oval slices which slip less than small tomato slices.
  7. Slice ¼ to ½ of avocado in thin slices, place directly on bottom of bun.
Assemble from bottom to top:
  1. Bottom bun, avocado, lettuce, tomatoes, chicken, bacon, cheese grilled bun.
