Cobb Salad on a Bun
 
 
If you're a fan of Cobb Salad, then you're sure to be a fan of my Cobb Salad on a Bun. This is an easy to make salad turned sandwich for easy eating at home or on the go.
Ingredients
  • Udi's Gluten-Free Bagel or other Sandwich Bun
  • Cheddar or Blue Cheese
  • Salad Greens - Butter Crisp and Romaine lettuce, Spinach
  • Roma Tomato
  • Avocado
  • Grilled Chicken Breast
  • Fried Bacon Slices
Instructions
  1. Fry bacon and set aside.
  2. Toast bun with cheese on one side, using toaster oven.
  3. While bun is toasting, heat chicken breast. Wrap in wet paper towel if microwaving to keep moist.
  4. Slice in long, thin slices going with the grain of the meat.
  5. No need to tear or shred lettuce or spinach leaves. Fold large leaves in ½ to fit better on bun.
  6. Slice tomatoes lengthwise from top to bottom for long, oval slices which slip less than small tomato slices.
  7. Slice ¼ to ½ of avocado in thin slices, place directly on bottom of bun.
Assemble from bottom to top:
  1. Bottom bun, avocado, lettuce, tomatoes, chicken, bacon, cheese grilled bun.
