Beef & Broccoli is something that I’ve always really liked, but haven’t always been able to make at home as a homemade Chinese dish.  Then I discovered the Marie Callender’s Beef & Broccoli frozen dinner.  It’s not really a Chinese dinner, but instead a fabulous homestyle meal.

Homestyle, I can do that.  Beef & Broccoli, I can do that, too.

I LOVE roast beef.  It’s taken me about twenty years of cooking on my own to learn to cook a really good roast beef, but after a couple of days, we get tired of eating it.  I grew up in a family of five and leftovers didn’t last long, but they seem to last forever in a family of two.  Unlike my mom, I have to get creative with our leftovers.

When I cook a Slow Cooker Roast Beef, I make sure there are plenty of leftovers these days.  While my daughter isn’t wild about plain old roast beef, she does love to use the roast beef to make Shredded Beef Quesadillas.  These days, I’m also setting aside some of the roast to make my Beef & Broccoli Copycat Recipe for Marie Callender’s. 

While I still buy the Marie Callender’s freezer meals in a pinch, I’d much rather make my own.  Since Miss Jogi doesn’t really like gravy on meat and certainly doesn’t like broccoli, I make all of the leftovers for myself and stick them in the freezer for when I need something just for myself.

My Beef & Broccoli Copycat Recipe for Marie Callender’s reheats really well and tastes so much better than the stuff that comes out of the box.  If you’ve ever purchased the box meals, you’ll know that the roast beef in their box is more like roast beef from the deli counter than an actual meat counter roast.  Plus, if you’ve got tons of food allergies like me, you’re able to control every single ingredient that goes into your Beef & Broccoli.

Enjoy this copycat Marie Callender's Beef & Broccoli copycat of slow-roasted beef served over a bed of fluffy white rice and broccoli in a rich gravy.
Ingredients
Instructions
  1. Warm each of the leftover items up enough, until just slightly warmed.
  2. Place rice in the bottom of the container.
  3. Chop or shred the leftover roast beef, if desired. Place on top of the rice.
  4. Scatter broccoli around the beef and rice.
  5. Top with gravy.
  6. Stir to mix gravy throughout and allow it to sink to the bottom of the dish.
