Cauliflower Hash Browns
I posted a recipe for Cauliflower Hash Browns a while back. I thought it looked like something I would actually eat and liked that it was low carb. I did the Atkins diet years ago, so I’m pretty well versed in the low carb genre. My parents are both diabetics and I suggested the recipe to my dad since he loves hash browns, but they make his blood sugar spin out of control. He turned his nose up at them though since they were made from cauliflower.
However, they became a LOT more appealing to ME on Monday. On Monday, I was diagnosed with Diabetes. Yes, I have Multiple Sclerosis AND Diabetes. I know you’re jealous. 😉
This is my first attempt at creating my own low carb, diabetic friendly recipe and must admit that I am quite pleased with myself. The original recipe called for just the use of bacon and cauliflower, but I kicked mine up with other low carb goodies that I already had and liked. The only thing I will try different next time is using Oscar Mayer bacon instead of the Walmart brand. Maybe it was because I fried the bacon in the skillet and haven’t done that in years. I normally bake it in the oven, so that’s also something I can do differently next time as well.

Serves: One serving
- 1½ - 2 c. Cauliflower
- ½ c. Mushrooms
- ¼ c. Onions
- 3 Slices of Bacon
- Bacon Grease from Frying Bacon
- 1-2 oz. Sharp Cheddar Cheese
- Fry 2 -3 strips of bacon and remove bacon from bacon grease.
- Chop or grate cauliflower, mushrooms, and onions into small pieces.
- Add chopped vegetables to the pan with the bacon grease.
- Cook vegetables, turning as needed, until well browned.
- Top with cheese. Allow to melt into veggies before removing from the skillet.
This is full of fat!! Bacon grease!! Definitely not a ‘good for you’ meal.
Some of us happen to love cooking with bacon grease. It’s not filled with hydrogenated anything. If you look on nutrition labels, lard based fats generally are healthier than plant based fats used for cooking. I haven’t checked these labels in many years, so I can’t guarantee that this is still accurate.
As a diabetic, myself, it is a meal that has been eaten and enjoyed by me many times.

Low carb dieting needs higher fat levels to help process the higher ratio of carbs/fiber and proteins. Three strips of bacon will be just fine. Q- Why did you take them out? Fantastic hash with the chopped bacon addition!
I definitely will try this as fat from 3 good pieces of bacon will not be much fat and you need good fat in your daily diet! You also can do turkey bacon (Trader Joes is awesome) and then just use a little olive or coconut or oil you choose.
Please don’t stop with the great ideas and recipes because some can’t think for themselves! We appreciate you and all you do. Best of luck with your health!

Have you noticed a difference when using frozen cauliflower vs. fresh? (whether it changes the consistency of the hash much?)
I grated and froze a bunch of “cauli-rice” so I could use it in recipes later, and this sounds like it has good potential, but I’m worried it may not get as crisp-sounding as you intend.
Hmmm…good question. I’ve only used fresh cauliflower. Give it a try and let me know, please.

I was wondering how this would be with cabbage instead of cauliflower. I have three heads that I need to do something with before they go bad.

Sounds yummy. Bacon fat once in a while is no different than eating butter, cheese, ground beef, roast, french fries, potato chips chicken skin…
What is nutritional comp? I am shocked that with all the talk that this is great for diabetics, there is no nutritional composition info. Should we just take your word? Low carbs for one person might be 40. For another, 10! Nutrition please?
