Cauliflower Hash – Low Carb & Diabetic Friendly
- 1½ - 2 c. Cauliflower
- ½ c. Mushrooms
- ¼ c. Onions
- 3 Slices of Bacon
- Bacon Grease from Frying Bacon
- 1-2 oz. Sharp Cheddar Cheese
- Fry 2 -3 strips of bacon and remove bacon from bacon grease.
- Chop or grate cauliflower, mushrooms, and onions into small pieces.
- Add chopped vegetables to the pan with the bacon grease.
- Cook vegetables, turning as needed, until well browned.
- Top with cheese. Allow to melt into veggies before removing from the skillet.
