Cauliflower Hash – Low Carb & Diabetic Friendly

Diabetic or just eating a low carb diet? Cauliflower Hash is a great alternative to hash browns. They're easy to make and full of flavor.
Serves: One serving
Ingredients
  • 1½ - 2 c. Cauliflower
  • ½ c. Mushrooms
  • ¼ c. Onions
  • 3 Slices of Bacon
  • Bacon Grease from Frying Bacon
  • 1-2 oz. Sharp Cheddar Cheese
Instructions
  1. Fry 2 -3 strips of bacon and remove bacon from bacon grease.
  2. Chop or grate cauliflower, mushrooms, and onions into small pieces.
  3. Add chopped vegetables to the pan with the bacon grease.
  4. Cook vegetables, turning as needed, until well browned.
  5. Top with cheese. Allow to melt into veggies before removing from the skillet.
