New Orleans Style Muffaletta Sandwich and it’s Gluten Free

Traditionally, a muffaletta is made on a big, fat Italian roll and smothered in olive salad. Because of a gluten intolerance, I now make my own muffalettas, including the olive salad. Yum Yum!
Ingredients
  • Olive Salad (or Green Olives, Black Olives, Red Onion, Italian Dressing)
  • Sliced Pepperoni
  • Sliced Salami (Genoa or Hard)
  • Provolone Cheese
  • Mozzarella Cheese
  • Gluten Free Bread
Instructions
  1. Preheat oven to 400*.
To Reduce the Fat and Calories:
  1. Spread salami and pepperoni between sheets of paper towels. Microwave for about 20 - 30 seconds. Take out and roll paper towels into a scroll shape with salami and pepperoni inside.
For the Olive Salad:
  1. Use a variety of deli, jar, or canned green and black olives. Chop olives into small pieces. Combine olives together.
  2. Cut onion into small pieces. Add to olive mix.

  4. Add just enough Italian dressing to the olive mix to blend everything well.
  5. If you like a little spice, chop and add pepperocinis to the olive salad.
For the Sandwich:
  1. Place two slices of bread on a stone, baking sheet etc.
  2. Spread olive salad completely across each slice of bread.
  3. Cover one slice of bread with salami and the other slice of bread with pepperoni.
  4. Cover one side with provolone and the other side with mozzarella
  5. Add more olive salad to one side.
  6. Bake until cheese is golden and bubbly.
  7. Stack the two sides together after removing from the oven to get all of the flavors in every bite.
