#Pizza can be high in fat and cholesterol in addition to being expensive. Pizza pie can be an affordable substitute and made much healthier using my these tricks and tips. A fresh green salad, pasta salad, or even chips go great with pizza pie and keep it from being a heavy meal. #GlutenFree #Italian #Muffins
OPTIONAL, but cuts out a TONS of fat and grease. Spread the pepperoni out on a layer of paper towels (2 or 3 thick) and cover with a layer of paper towels.
Microwave for about 10-15 seconds. Remove from microwave and roll the paper towels like a scroll. Set the pepperoni aside and repeat with the salami. You need to use fresh paper towels.
The first picture shows the grease from the paper towel that was only laying on top of the pepperoni when it was microwaved. The second picture shows what it looked like after rolling the paper towel up like the second picture above.
***I make up my batter/dough twice in this recipe. It keeps it from setting up too quickly and becoming unspreadable between steps 4 and 8.***
Stir 1 c. Bisquick mix, ½ c. (3/4 c. to 1 c. for Gluten free) milk and egg in medium bowl with wire whisk or fork until blended. Spread batter in baking dish or into 12 muffin tins.
Add a layer of salami, spreading it out evenly. Extra pieces can be cut or torn to fill in the gaps that you can still see (the yellow).
Sprinkle with about ¾ c of cheese.
Add a layer of pepperoni.
Top with the remainder of the cheese. **I love olives, but my daughter doesn't, so I only put olives on my side. It's easiest to remember which side has the olives if I use my pie pan with the handles. I just use the handles to help me judge ½ the pizza pie.
The meat can also be diced before microwaving. Instead of layering the meats and cheese, it can be all mixed together and combined into one step.
Stir 1 c. Bisquick mix, ½ c. (3/4 c. to 1 c. for Gluten free) milk and egg in medium bowl with wire whisk or fork until blended. Spread the remaining batter over the top.
I sprinkle the top with pizza seasoning only on my side so I know which side has the olives.
Bake uncovered about 20 - 29 minutes (time will vary depending on oven and baking dish used) or until golden brown and center is set. Let stand 5 minutes before cutting.
