Banana Chocolate Chip Whoopie Pies are naturally sweet and tasty. They're protein packed and relatively low in calories. Use a sugar substitute and save calories without sacrificing taste.
Serves: 18 whoopie pie pieces
Ingredients
  • 2.5 cups old fashioned oats
  • 1 cup plain Greek yogurt (mine was 7oz.)
  • 2 eggs (only had 1, used powdered for the 2nd)
  • ¾ cup sugar {or sweetener of choice, will use less next time}
  • 1.5 tsp baking powder
  • ½ tsp baking soda
  • 2 ripe bananas
  • Miniature Chocolate Chips {optional}
Filling:
  • 8 oz Cream Cheese (room temperature)
  • 1 c. Plain Greek Yogurt
  • 1 c. (or to taste) Powdered Sugar
  • 1 tsp. vanilla
Instructions
  1. Preheat oven to 400 degrees. Spray pan with non-stick cooking spray.
  2. Run oats through food processor to chop into smaller pieces.
  3. Add other ingredients, one at a time, if a large food processor is used. Dump ingredients into a separate bowl, if a small food processor is used.
  4. Blend all ingredients together.
  5. Sprinkle miniature chocolate chips across the tops, if desired.
  6. Spoon batter into pie wells, bake for 8-12 minutes, or until toothpick comes out clean.
  7. Baking time will vary based on your oven.
  8. While whoopie pie pieces are baking, blend cream cheese, yogurt, and powdered sugar together using a mixer or food processor.
  9. Refrigerate filling to help thicken.
  10. After pie pieces are baked and cooled, add approximately one tablespoon of filling between two whoopie pie pieces.
