Super Simple Fruit Salad

Super Simple Fruit Salad

This month the Dishing It Up crew is offering you a great collection of recipes that require  five ingredients or less.    Some of us may fudge a little by saying that some things are optional, but those will be the ingredients that are exactly that – optional.  This Super Simple Fruit Salad is a variation of a recipe that my sister began making years ago.  Other members of my family use peach pie filling in their recipe, but I prefer to make it a much lower in sugar.  I usually make this recipe using frozen strawberries, but fresh strawberries were on sale really cheap!

If you read my previous post about Valentine’s Day Cinnamon Rolls, you know that I wrote a bit about how presentation can make a huge difference. The bowl is one from my grandmother.  She NEVER had anything fancy and I’m surprised that she had this bowl, but it makes me think of her every time I use it.  It’s special to me just because it was hers.  Then when it’s placed on top of my spring tablecloth, it makes everything look really put together!

Want to make this Super Simple Fruit Salad frugal, too?  Make sure to check out some of the coupon sites to look for coupons for the canned fruits.  I can’t promise they’re gonna be there, but they do tend to come and go.  😉

Serves: 2-3 Quarts

True to its name, this is a Super Simple Fruit Salad. It requires only five ingredients, is low in sugar, and includes options to include even less sugar.
Ingredients
  • Lg. Can Crushed Pineapple
  • Lg. Can Mandarin Oranges
  • Bag of Frozen Peaches
  • 1 - 2 Pints of Strawberries - Fresh or Frozen
  • 3 Bananas
Instructions
  1. Peel and slice bananas into a colander. Drain the cans of mandarin oranges and crushed pineapple over the bananas. Stir the bananas around between draining the two cans. The fruit juices contain natural preservatives which help prevent the bananas from turning brown.
  2. Transfer the fruit from the colander to your serving dish and stir to thoroughly coat the bananas in the fruit juice that remains.
  3. If the peaches are slightly thawed, they can be easily cut into bite size chunks. I often prepare this fruit salad the night before and just dump the whole bag in frozen.
  4. Wash and stem fresh strawberries. Drain in the same colander you already used. No need to wash it out.
  5. Slice the strawberries by hand if desired. I meant to slice in my food chopper, but used the wrong blade. Oops, it was a great success though!
  6. Add the strawberries to your other fruits.
  7. If I use frozen and I'm making it the night before, I dump the frozen bowl onto the top of the frozen peaches and cover with foil. Everything is thawed by morning.
  8. Mix fruits together and serve. If frozen strawberries are used, the recipe will be very similar to having pureed the strawberries in step 5. My recent guests said it was great this way because they had strawberries in every bite.
Notes
To further reduce the calories and sugar in the recipe, select canned fruit packed in water instead of syrup. Also make sure to select no sugar added strawberries if buying frozen.

  1. I would try this, it is easy, but healthy and yummy! The fact that you “messed up” the strawberries but everyone liked it as well (and some even better!) reminds me that what we think are cooking disasters sometimes aren’t!

  2. Judy Bradley says

This looks good with the strawberry ‘oops’ and I would maybe try it, but I am not really keen on dishes with crushed pineapple in it. Thanks for sharing!

  3. Faline Morrison says

I am going to try this. I have my nieces graduation pary this next month and I think it will be a big hit.

  4. Great fruit salad recipe, though I would use pineapple chunks instead of crushed since my kids like that more

  5. I’d try it but I really love fresh pineapple. I only use canned for baking! I just wish fresh wasn’t so expensive!

  6. Sheryl Folkert says

Looks absolutely delicious and I love the lower sugar aspect to this since I am working out and trying to get back into shape – this would make a great quick pick me up snack without the guilt.

  7. Jody Burns says

Looks like an easy addition to any dinner or fast family dessert. I will have to try this recipe also.

  8. Patti Purelli says

Yum. This looks delish! May have to try it this weekend.
