Slow Cooker Baked Beans with Ground Beef

My Slow Cooker Baked Beans with Ground Beef recipe came from a family friend, nearly thirty years.  I remember loving this recipe as a kid and continue loving it as an adult.  I’m sure that there is a written copy of recipe somewhere, but where that is I haven’t a clue!   I called my mom to see if she knew where the recipe was and she informed me that she didn’t like baked beans and that she didn’t know where it would be.  We laughed about it and decided that I was probably the one that started cooking this recipe so many years ago.  No wonder my dad loves them so much when he eats them at my house, he probably hasn’t them since I moved away from home!  So, with all of this being said, you may find that my “measurements” may not be quite right for your taste.  I rarely use a written recipe when cooking, so  . . .

I also never learned to cook in small quantities.  When I prepare dishes like this, I tend to make a large batch (I have a 6 quart slow cooker)  so that I can freeze the leftovers.  This is one of those dishes that I almost always have plenty of in my deep freeze.  It’s an easy crowd pleaser and goes well with so many different types of meats.

Slow Cooker Baked Beans with Ground Beef

My Slow Cooker Baked Beans with Ground Beef is an easy crowd pleaser and goes well with so many different types of meats. Freeze and reheat as needed.
Ingredients
  • 2 - 12oz cans of Ranch Style Beans or chili beans
  • 2 - 12oz to 16oz cans of Baked Beans (I use Bush's Homestyle)
  • 1 lb ground beef
  • ½ ground sausage (breakfast type)
  • 1 small onion (about 1 c chopped)
  • 2 Tbsp mustard (I use spicy dijon style)
  • ¾ - 1 c BBQ sauce
  • ¾ - 1 c brown sugar (I've also used the Splenda variety)
Instructions
  1. Brown ground beef in skillet, breaking the clumps of meat as it cooks. Drain the ground beef in a colander in the sink, to discard the grease that has cooked out. While it is draining, brown the ground sausage using the same skillet. Again, break apart any clumps while it cooks. Add the ground beef to the slow cooker, then use the colander to drain the sausage. Draining the sausage on a layer of paper towels can help remove additional grease. Add the sausage to the slow cooker.
  2. While the ground beef and sausage are browning, the beans can be opened and poured into the slow cooker. Do NOT rinse the beans.
  3. Chop the onion. I always throw mine into the slow cooker raw, but you may choose to brown them in the same skillet that you used for the beef and sausage. There's no need to wash it in between. The remaining grease and tidbits of meat will help cook and flavor the onion. Add the onion to the slow cooker.
  4. Add remaining ingredients and stir thoroughly to mix.
  5. Beans are ready to eat when thoroughly heated.
Notes
I like to let this cook for several hours on high. It gives the flavors more time to combine together and tastes even better. I do find that this fills my slow cooker all the way to the top, so I usually have to dip out a little bit of the liquid to keep it from getting too bubbly. If you like your beans to be thicker, you can remove even more of the liquid. The consistency does not change much while cooking. You can easily put all of the ingredients together in your slow cooker at night before going to bed, but put the crock in the refrigerator (or the whole slow cooker if it's not removable). Before going to work, remove the crock from the refrigerator, plug in the slow cooker, and you're house will be filled with all kinds of yummy aroma when you get home from work.

If you're not a slow cooker type of person, no problem. This recipe was originally made in the oven. Use a large oven-safe casserole dish and spray with nonstick cooking spray before putting all of the ingredients into it. Back at 400* until bubbly.
