How well do leftovers go over at your house? My ex-husband all but refused to eat leftovers when we were first married. He soon got over that. MS Do came from a family of five and her mama always cooked enough for two meals. So, MS Do learned to cook big!

These days, I try to get a little more creative with my leftovers and those things I cook in bulk and stick in my freezer. I now purposely plan to have leftovers of some things because I want to make something specific with them. While I started out with a Slow Cooker Roast Beef, I planned to make a new copycat recipe for Marie Callender’s Beef & Broccoli, plus a Shredded Beef Quesadilla recipe. Of course, we didn’t immediately make all of these yummy leftover meals with the roast beef. I LOVE, roast beef, but that would have been overkill.  We froze the leftovers and then pulled them back out to make the Shredded Beef Quesadilla recipe.  Of course, the Shredded Beef Quesadilla could also be made, frozen, and then reheated as needed.

My daughter and I have enjoyed my Shredded Beef Quesadilla recipe for years, so we decided it was time to share it with you.  If you’re Gluten-Free like me, just make sure to make your Quesadilla before making any Quesadillas which contain gluten.

Just in time to help me prepare my Shredded Beef Quesadilla recipe, I received a box of new kitchen gadgets and goodies from a company called Kitchen Innovations. The products reviewed come from their Zeal product line and are all great additions to my kitchen.  Of course, my daughter is eyeballing quite a few of the items for Hope Chest.  I know she’s going to make off with the Heart Cake Tester if I don’t keep a close on it.  She’s already remarked about how cute the little heart storage case is for it.

Ingredients
  • Leftover Roast Beef
  • Tortillas - Regular or Gluten Free
  • Butter or Margarine
  • Grated Cheese
  • Optional Ingredients
  • Taco Seasoning
  • Garlic Salt
  • Tomatoes
  • Lettuce
  • Guacamole
  • Salsa
  • Sour Cream
Instructions
  1. Heat skillet over medium heat.
  2. Butter either the skillet or the tortilla. This is especially important if using a Gluten Free tortilla. It needs the extra moisture to keep it from breaking.
  3. I used my Heat Resistant Love Baking Cookie Lifter to flip the tortilla and then buttered the other side. To keep the Cookie Lifter out of the way, I placed it in the Clip To Pan Spoon Rest.
  4. Turn heat down to low.
  5. Cover the entire tortilla with grated cheese.
  6. While cheese is melting, place the Roast Beef (warmed slightly in the microwave) on the Straight to Pan – Large Slim Chopping Board Use 2 forks to shred the beef.
  7. Add the shredded beef to the top of the cheese on tortilla, sprinkle with taco seasoning.
  8. Slice tomatoes and add to one side of the tortilla, if desired. Sprinkle tomatoes with a little garlic salt, if desired. Add more cheese to the other side of the tortilla. Tomatoes & Extra Cheese
  9. Continue heating until the the beef and cheese are they are well melted together on the tortilla.
  10. Top with shredded lettuce and immediately remove from heat. Shredded beef quesadilla recipe with lettuce
  11. Fold the tortilla in half. Shredded Beef Quesadilla Recipe
  12. Use a sharp knife or pizza cutter to slice into quarters.
  13. Serve with guacamole, salsa, sour cream, or other favorite toppings.

After our Shredded Beef Quesadilla dinner, we had a little dessert.  Miss Jogi settled on a piece of cheesecake , while I was content with a couple of scoops of ice cream.  I used the I Love Cake Slicing Cake Server to slice and serve her cheesecake, cheesecake is a type of cake after all!  Miss Jogi has also threatened to also make off with my Cone Ice Cream Scoop.   Of course, I think I’ll have to an eye on all of the rest of my new Zeal and Kitchen Innovations products.

Kitchen Innovations Pie Blender & Potato Masher

At first, I wasn’t too sure that the Kitchen Innovations Perfect Pie Blender was really much different than the Perfect Masher, other than handle shape and length.  After closer inspection, I figured out some differences.  The Perfect Masher is taller and the blades are closer together than the Perfect Pie Blender.  Both are designed to cut with a twisting motion, but the difference is that the Pefect Pie Blender is designed to cut shortening or other fats into dry ingredients.  These ingredients tend to remain clumpy and coarse when finished.  The Perfect Pie Blender has blades that are closer together, which results in a smoother mashed potato.  Want perfect mashed potatoes?  Use a handheld tool, like the Perfect Masher, and your potatoes will be light and fluffy every time.
