How do some Savory Sausage & Cheese Breakfast Muffins sound?  They make a hearty warm breakfast that’s great for home or on the go. The kids also love anything in a cupcake liner!  Make a big batch of these Savory Sausage & Cheese Breakfast Muffins, put them in the freezer, and then warm them up when you need them.

Five or six ingredients make these savory sausage and cheese breakfast muffins filling, but wont leave you feeling weighed down. Gluten Free Subs included.
Ingredients
  • 1 lb. ground sausage
  • 1½ to 2 c. grated cheese (I prefer sharp)
  • 1 c. milk
  • ½ c. Bisquick
  • 2 eggs
  • 1 small onion (optional)
Instructions
  1. Preheat oven to 400*
  2. Onions are optional, but add SO MUCH FLAVOR!
  3. Don't worry about peeling the onion first. It's a LOT easier and faster to peel after it's been cut in half. After removing the skins, mince into tiny pieces.
  4. Place muffin cup liners in the muffin tin to bake and serve individual servings. A glass pie pan could be used instead to cook it more as a casserole.
  5. Add each of the ingredients to the mixing bowl. I like to keep my items "separated" in the bowl until ready to mix. It makes it really easy to glimpse over my ingredient list and compare to my bowl to make sure I haven't forgotten anything.
  6. After double checking my ingredients, mix everything together. It will be a bit on the runny side since there is much Bisquick to thicken the batter.
  7. Fill each muffin cup about ⅔ to ¾ full.
  8. Bake at 400* for 15-25 minutes until golden brown. If the pie plate is used bake for around 35 minutes.
