Fan of the Savory Chicken and Rice Casserole from Marie Callender’s?  I’m a fan of most anything with chicken and rice.  Throw in a few vegetables, some sauce, add a sprinkle of cheese and this is one happy girl!  Make that sauce a gravy and I go from from happy to down right tickled.

Even though I really like the Marie Callender’s frozen meals, I’ve learned that I can make them at home.  However, when I make them at home, I can make a BUNCH of frozen meals for the price of about one or two.  It also gives me more control of the ingredients going into the food I eat.  When you buy a frozen meal at the store you never know how long they’ve been in the store’s freezer, but you have an exact date when you make your own.

Although I do eat gluten-free, thankfully I don’t have Celiac Disease.  I don’t have to be 100% GF, but many people do.    Of course, those who can’t tolerate any gluten, could substitute the canned soup with the Watkins Cream Soup & Gravy Base recipe available  on the can.  While the Watkins Cream Soup is GF, as far as I can tell, the Cream of Mushroom soup is not.

Savory Chicken and Rice CasseroleThen you bring in the “ick” factor of frozen dinners from the microwave.  We all know the stuff that comes out of our microwaves looks absolutely NOTHING like the stuff that is pictured on the front of the box.  The companies hire food stylists to make their foods look beautiful when photographed for their box covers.  I assure you that MS Do did not hire a food stylists, nor is she a food stylist.  There is absolutely no doubt that mine looked so much better than the Savory Chicken and Rice Casserole from Marie Callender’s.  Even when mine had been frozen for several months and then microwaved, they still came out looking almost identical to this original picture.  Decide for yourself, store bought or homemade.  I know which one I’m putting my money into for now on.

Savory Chicken and Rice Casserole Marie Callender’s Copycat Recipe
Ingredients
  • 4 -6 Chicken Breasts
  • 2 boxes Long Grain & Wild Rice Mix (used Zatarain's & Rice-A-Roni)
  • 2 c. frozen Peas & Carrots
  • 1 can Cream of Mushroom Soup
  • 1 tub Knorr Homestyle Chicken Stock
  • 1 c. shredded Cheese
Instructions
  1. Cook 4-6 chicken breasts. Depending on breast size, personal appetite, and personal preference to determine your exact number. Mine was cooked in a slow cooker for a couple of hours. I placed frozen chicken breasts into the slow cooker and seasoned with Mrs. Dash, garlic salt, and seasoned salt. The chicken could be boiled as well. If the chicken is boiled, homemade stock could be used in place of the Knorr Homestyle Chicken Stock.
  2. Add frozen vegetables to a large casserole dish and cook according to rice package directions. I used two different brands because that's what I had.
  3. Stir to mix the rice and vegetables together. The veggies tend to cook up to the top.
  4. Cube chicken into bite-size pieces.
  5. Heat Cream of Mushroom Soup with Knorr Homestyle Chicken Stock. Blend well.
  6. Spoon rice evenly into 6 - 8 freezer dishes. I only made 5 and later decided that the portions were just too large!
  7. Divide chicken between the bowls, then spoon mushroom sauce on top. Sprinkle grated cheese on top of each bowl.
  8. Allow to cool thoroughly, then place containers in the freezer.

  1. Thanks for this recipe! W/a large family, frozen meal are out. By the time I buy enough to feed everyone, we could probably go out to eat. I don’t know about anyone else, but my husband and teen could easily eat two frozen portions, and still be hungry shortly after.

    How long would you cook a pan for and at what temperature?

    • Hi Dalynn –
      Are you talking about to microwave to reheat? It just depends on your microwave and if you’re reheating from thawed or frozen. You’ll just have to experiment with your own microwave to find out what works best for you.

    • Sorry about that. It’s a problem in a program I use to share my recipes. I use TWO boxes of rice mixes. I’ll try to correct that now. Thanks for alerting me to the issue. Happy cooking!
