Protein-Packed Avocado Fudge Brownies

Yes, I know.  Dr. Oz says that he doesn’t endorse things.  However, I know for a fact that he endorsed Dr. Oz’s Protein-Packed Avocado Brownies.  I found the recipe on his website!  🙂

Now that I’m a diabetic, I try to make thing a little healthier and with less sugar if possible.  I’ve also learned that protein helps balance the carbs (sugars) out in the system.  So, when I decided to make an Ice Cream Brownie Cake, I knew that I wanted a brownie packed with as much protein as I could.

I was quite impressed with how moist and fudge like these brownies were!  There was no added oil, butter, or any type of fat other than the avocado.  If I make these again, I plan to make them with either xylitol, stevia, or Splenda.  The calorie content was still higher than I would like, but wanted to try them according to the recipe the first time I made these Protein-Packed Avocado Fudge Brownies.

Ingredients
  • 4 eggs (I used 5 medium brown eggs)
  • 1 cup sugar
  • 8 oz. semi-sweet chocolate chips (I used milk chocolate)
  • ½ cup unsweetened cocao powder
  • ½ cup almond meal
  • ½ tsp salt
  • 2 tsp vanilla extract
  • 2 ripe avocados, mashed smooth
Instructions
  1. Preheat oven to 350°F.
  2. Whip eggs and sugar until fluffy using a mixer.
  3. Melt the chocolate chips over low heat, using a double boiler, or in the microwave at 50% power. Stir frequently no matter which method used.
  4. Turn the mixer on again and add the melted chocolate a little at a time, until all chocolate has been blended into the egg and sugar mixture. If the chocolate begins to harden again, return to heat to melt again.
  5. Add vanilla and salt to the chocolate mixture and blend well.
  6. Add cocoa powder to the bowl and blend on low. The cocoa will fly all over is mixed at a high speed.
  7. When cocoa powder is well mixed, add the almond meal. Mix at low speed.
  8. Mash the avocados. Slice and chop them into small chunks, then transfer to a bowl. Continue to chop with a knife and/or fork until blended smooth and creamy. Use a food processor or the mixer (in a separate bowl) if desired. Chunks of avocado will be noticeable in the brownie.
  9. Fold the avocados into the chocolate mix, until no obvious green is visible. Folding is different than stirring or blending. Think of using the spoon to lift and lay the ingredients over one another.
  10. Pour into an 8x8 baking pan and bake for about 30 minutes. Use a wooden toothpick or chopstick to test the middle. When it comes out clean, you are done!
