Ground Beef and Rice Stuffed Bell Peppers – l’ve learned that most people either love them or hate them. I’m one of those who has ALWAYS hated them! When I was a kid, my mom would always make mine and cook my meatball thing in a separate dish from everyone else because I wouldn’t even touch it if it was in the pepper. It’s the bell pepper thing, I can’t even begin to tell you how many times I’ve sent a pizza back because it came topped with them. The funny thing is that I love hot peppers!

How much rice?
Sorry, I’ve never noticed the missing measurement for the rice. I believe she used one of those instant rice pouches. I’m pretty sure that is equal to two cups of cooked rice or one cup of raw rice cooked in two cups of water.
