Ground Beef and Rice Stuffed Bell Peppers – l’ve learned that most people either love them or hate them.  I’m one of those who has ALWAYS hated them!  When I was a kid, my mom would always make mine and cook my meatball thing in a separate dish from everyone else because I wouldn’t even touch it if it was in the pepper. It’s the bell pepper thing, I can’t even begin to tell you how many times I’ve sent a pizza back because it came topped with them.  The funny thing is that I love hot peppers!

Ground Beef and Rice Stuffed Bell Peppers

If you can brown ground beef, you can make Ground Beef and Rice Stuffed Bell Peppers. Simple ingredients lead to a home cooked favorite loved by many.
Ingredients
  • Four large green peppers
  • 1 pound of ground beef
  • Shredded cheese
  • Rice (instant or cooked)
  • 15 ounce can of tomato sauce
Optional:
  • Chopped Garlic
  • Chopped Onion
  • Additional Seasoning - Salt, Pepper, Mrs. Dash, etc.
Instructions
  1. Preheat oven to 325 degrees
  2. Brown the burger in a large pan, add garlic, onion, and additional seasoning like salt, pepper, and Mrs. Dash if desired.
  3. Warm the tomato sauce in a pot
  4. Warm (or cook!) the rice in a pot
  5. While the above are cooking, slice off the top of the peppers and take out all seeds
  6. When the burger is well browned, rice is cooked, and tomato sauce is warm, combine all ingredients in the large pan used to brown the beef .
  7. Once combined, fill the peppers with the mix from the pan.
  8. Top with shredded cheese.
  9. Place filled peppers in an oven safe baking dish. The dish should be small enough to keep the peppers upright.
  10. Bake for 35-40 minutes.

  1. How much rice?

    • Sorry, I’ve never noticed the missing measurement for the rice. I believe she used one of those instant rice pouches. I’m pretty sure that is equal to two cups of cooked rice or one cup of raw rice cooked in two cups of water.
