Gluten Free (or Not) Lasagna Soup

Whether you like lasagna or not, you might really like Lasagna Soup.

My daughter and I love to eat at Olive Garden and typically eat the Tour of Italy combo.  If you’re not familiar with the Tour of Italy, it comes with Lasagna, Chicken Parmesan, and Fettuccine Alfredo.  It’s a HUGE meal and we share it.  We swap the Fettuccine noodles for Angel Hair and eat all of the layers of scrumptiousness of the Lasagna, except for the pasta.  We like small, thin pastas, not the thick solid lasagna noodles.

We don’t live near an Olive Garden, so those meals are few and far in between.  So, what is a recipe blogger to do?  She creates her own recipes, of course!  Since we’re not huge fans of the heaviness of the lasagna noodles, I thought a lighter Lasagna Soup might be something we’d liked better.  Guess what?  I was right!

Not interested in making Lasagna Soup gluten free?  It’s not a problem.  Just use regular noodles in place of the gluten-free noodles.

Like spinach, but the rest of your family won’t touch it?  Can’t even get them to try spinach?  You can sneak a TON of spinach into the soup without them ever realizing it!

Want to make the lasagna, but not a huge pan like the original recipe will make?  Not a problem.  I actually made three separate recipes using the base tomato sauce recipe:

Lasagna Soup is packed with those Italian flavors found in a traditional Lasagna, but without the heavy layers and thick noodles. Save calories and enjoy!
Ingredients
  • 1 (28 ounce) can Red Gold® Crushed Tomatoes
  • 2 (14.5 ounce) cans Red Gold® Diced Tomatoes With Basil, Garlic & Oregano
  • 6 to 10 oz. Fresh Spinach (optional)
  • 1 teaspoon (each) Dry Oregano, Basil, and Parsley
  • 1 to 3 tsp Garlic Powder (to taste)
  • Salt to taste
  • 1 pound ground Italian sausage, lean ground beef, or a combination of both
  • 1 (16 oz)bag Sam Mills Pasta d'oro Gluten Free 100% Lasagna Corn Pasta
  • 1-3 cups shredded Italian Cheese

Instructions
  1. In a large pot combine water, RED GOLD® Crushed Tomatoes, RED GOLD® Diced Tomatoes with Basil, GARLIC & OREGANO,
  2. Add dry oregano, basil, parsley, garlic powder, and salt to taste.
  3. Heat pot at medium temperature.
  4. Chop spinach into tiny, chopped shreds.
  5. Chopped Spinach
  6. Add spinach to the tomatoes and mix well.
  7. Tomato Sauce with Spinach
  8. While tomatoes and spinach are heating, prep and cook the sausage and beef.
  9. If the Italian Sausages are in casings, use a sharp knife to slit the casing and remove the ground sausage. Discard casings.

  11. Brown Italian Sausage and ground beef. My beef was already cooked. Cook Italian Sausage
  12. Like that smooth, super fine meat texture found in many frozen and restaurant meats? Run the meats through the food processor. It will give a fine texture as well as blend the two meats together. Food Processor
  13. Add meat to the pot of tomatoes and heat at least 30 minutes. Lasagna Meat Sauce
  14. In a separate pot, cook lasagna noodles. A little oil will prevent the noodles from sticking together.
  15. Once the pasta is cooked, use pasta water to thin the tomato and meat sauce. No measurement is given as you may like thinner or thicker soups.
  16. Place lasagna pasta in a bowl and add soup.
  17. Top with shredded Italian Cheese.
