True to its name, this is a Super Simple Fruit Salad. It requires only five ingredients, is low in sugar, and includes options to include even less sugar.
Serves: 2-3 Quarts
Ingredients
  • Lg. Can Crushed Pineapple
  • Lg. Can Mandarin Oranges
  • Bag of Frozen Peaches
  • 1 - 2 Pints of Strawberries - Fresh or Frozen
  • 3 Bananas
Instructions
  1. Peel and slice bananas into a colander. Drain the cans of mandarin oranges and crushed pineapple over the bananas. Stir the bananas around between draining the two cans. The fruit juices contain natural preservatives which help prevent the bananas from turning brown.
  2. Transfer the fruit from the colander to your serving dish and stir to thoroughly coat the bananas in the fruit juice that remains.
  3. If the peaches are slightly thawed, they can be easily cut into bite size chunks. I often prepare this fruit salad the night before and just dump the whole bag in frozen.
  4. Wash and stem fresh strawberries. Drain in the same colander you already used. No need to wash it out.
  5. Slice the strawberries by hand if desired. I meant to slice in my food chopper, but used the wrong blade. Oops, it was a great success though!
  6. Add the strawberries to your other fruits.
  7. If I use frozen and I'm making it the night before, I dump the frozen bowl onto the top of the frozen peaches and cover with foil. Everything is thawed by morning.
  8. Mix fruits together and serve. If frozen strawberries are used, the recipe will be very similar to having pureed the strawberries in step 5. My recent guests said it was great this way because they had strawberries in every bite.
Notes
To further reduce the calories and sugar in the recipe, select canned fruit packed in water instead of syrup. Also make sure to select no sugar added strawberries if buying frozen.
