This week the Dishing It Up crew has some great Valentine’s treats to share with you. I haven’t been married for quite a few years and my daughter isn’t old enough to date yet, so we do something special together each Valentine’s Day.  My daughter created these herself last year.  She doesn’t like strawberries, but knows that I love them!  They’re named after, well, the Redneck Way in which they were made.  Chocolate Covered – Strawberries Redneck Style are named after, well, the Redneck Way in which they were made.  Trust me, they are ANYTHING but traditional strawberries!

Of course, many of the things that I did for these particular strawberries were just to show you that a little creativity goes a LONG can go a LONG way!  Students studying cooking at accredited online colleges may have some ideas for variations on the classic recipe.  If you read my previous post about Valentine’s Day Cinnamon Rolls, you know that I wrote a bit about how presentation can make a huge difference. The strawberries were placed in silicone muffin cups that I had recently purchased at Dollar Tree, $2 for two dozen.  WOOT!  To decorate the paper plate, I added a paper doily.  I’ve had a package of them forever!  Next week will be a great time to stock up on them since they’ll likely be marked down after Valentine’s Day.

Chocolate Covered Strawberries Redneck Style
Ingredients
Instructions
  1. Wash and drain strawberries. Use the container if they're not too dirty. If they're very dirty or the container doesn't have holes, use a colander.
  2. Spread on dish towel to dry. Gently pat dry. Then place in refrigerator to chill. Yes, they REALLY should be chilled.
  3. (Optional Step) After strawberries are ice cold, poke a toothpick into the centers of the strawberry caps (the green leafy part).
  4. While holding the strawberry using the toothpick, coat with the chocolate syrup. Hold the strawberry over a silicone cup so that the chocolate will drip down over the strawberry and collect in the bottom of the cup. Place strawberries in the silicone muffin cups. Once cold, any chocolate in the cup should lift out with the strawberry.
  5. If too much chocolate drips into the cup, roll other strawberries around in the cup to coat. Place the coated strawberries into empty muffin cups.
  6. (Optional) Sprinkle with candied cake toppings or colored sugars sprinkles if desired. No sprinkles were added to the white chocolate, it already had little sprinkly stuff in it. 😉
  7. Once all strawberries (or desired amount) are coated with chocolate, they are ready to refrigerate.
  8. (OPTIONAL) Place strawberries in the refrigerator to allow the chocolate to harden. (My daughter decided we needed a picture of me.) 😉
  9. Once the chocolate has hardened, remove from the refrigerator and experiment with your presentation/arrangement of strawberries. This is cute, but the doilly fades intothe placemat and the white muffin cups into the doilly.
  10. Enjoy your day and your loved ones. I'm sure they'll enjoy your easy peasy Redneck Chocolate Covered Strawberries.
