Miss JoJo is a chicken girl. She would eat chicken every meal, every day of the week if I’d let her! We’re not even talking about cooking chicken 10,001 different way. Get out the countertop grill, throw a piece of chicken on with a little bit some kind of seasoning, and rice or potatoes for a side and Miss JoJo is one happy girl.
I’m NOT a chicken fan and get bored with plain old grilled chicken quickly. A couple of weeks ago, I tried to make some shredded chicken, Mexican Style. You know, like many Mexican restaurants use on nachos or in enchiladas. I couldn’t even get her to try it! I loved chicken pot pie when I was a kid and decided to try to make my own a few years ago. Do you think she would even consider it? Heck no!
