Quite some time ago, I received this huge bag of oatmeal from Vitacost.  I was less than thrilled because I am NOT a fan of oatmeal.  I don’t want oatmeal for breakfast, I don’t want oatmeal cookies, I don’t want anything with oatmeal.  It’s always been one of those things that just doesn’t go down well for me, kind of like coconut.  YUCK!

I am a fan of banana nut bread though.  My local grocery store even marks the spotty bananas down  and I buy them with the sole purpose of making banana nut bread or muffins.  Imagine my surprise when I set out to make my muffins this week and found that my daughter had thrown out my almost rotten bananas.  Even more surprising was that I was out of my homemade Gluten-Free Bisquick!.  A trip to the store fixed my banana shortage, but I decided to find a different recipe.

Lo and behold, I found a recipe that called for that stinking oatmeal!  From doing my homework, I learned that I could run those oat through my food processor to chop them to almost a powdery flour.  I decided that it might not be so bad if it were chopped up really fine.  I also consider it pretty healthy since it’s higher in fiber than my Bisquick would be and it’s low in sugar.

But I took the recipe a step further.  After all, I had received a great new  package from Good Cook and had to do something with that cute Whoopie Pie Pan I had received.  I also have plans to use the 9″ cake pan for a carrot cake, so keep an eye out for that recipe.  With a Lifetime Guarantee and the incredible nonstick surface, my whoopie pies are slid out of the pan with ease.

It took some work and lots of goop down the drain to create a filling for my Banana Chocolate Chip Whoopie Pies.  I wanted something that was at least semi-sweet, but not sugary sweet.  My neighbor is a fabulous baker and suggested that I use cornstarch in place of some of the powdered sugar for the filling.  Ooooh, YUCK!  I had to give up on using bananas in the filling, but instead it was protein packed with a hint of sweetness.  Try it, you might like it!

I amazed myself when I broke down the nutrition information for these tasty Banana Chocolate Chip Whoopie Pies.

I now make these and eat them as just plain old cookies or muffins.  As soon as they cool, I place them in freezer containers and freeze.  To reheat, place them between a wet paper towel and reheat for about 15 seconds per piece.

Banana Chocolate Chip Whoopie Pies

Banana Chocolate Chip Whoopie Pies are naturally sweet and tasty. They're protein packed and relatively low in calories. Use a sugar substitute and save calories without sacrificing taste.
Ingredients
  • 2.5 cups old fashioned oats
  • 1 cup plain Greek yogurt (mine was 7oz.)
  • 2 eggs (only had 1, used powdered for the 2nd)
  • ¾ cup sugar {or sweetener of choice, will use less next time}
  • 1.5 tsp baking powder
  • ½ tsp baking soda
  • 2 ripe bananas
  • Miniature Chocolate Chips {optional}
Filling:
  • 8 oz Cream Cheese (room temperature)
  • 1 c. Plain Greek Yogurt
  • 1 c. (or to taste) Powdered Sugar
  • 1 tsp. vanilla
Instructions
  1. Preheat oven to 400 degrees. Spray pan with non-stick cooking spray.
  2. Run oats through food processor to chop into smaller pieces.
  3. Add other ingredients, one at a time, if a large food processor is used. Dump ingredients into a separate bowl, if a small food processor is used.
  4. Blend all ingredients together.
  5. Sprinkle miniature chocolate chips across the tops, if desired.
  6. Spoon batter into pie wells, bake for 8-12 minutes, or until toothpick comes out clean.
  7. Baking time will vary based on your oven.
  8. While whoopie pie pieces are baking, blend cream cheese, yogurt, and powdered sugar together using a mixer or food processor.
  9. Refrigerate filling to help thicken.
  10. After pie pieces are baked and cooled, add approximately one tablespoon of filling between two whoopie pie pieces.
