A Great Family Dinner Thanks to Kroger

 Kroger Pork Tenderloin Spring Dinner

As a BzzAgent, I received  coupons to make a full family meal.  I had coupons for a free Kroger moist and tender pork tenderloin, Kroger side (mashed potatoes or macaroni and cheese), Kroger refrigerated crescent rolls, and even a free Kroger cake mix and icing.

Since my parents don’t tend to cook big meals and my Dad has been ill, we decided they were the perfect people to share the meal with. It actually turned out very well. I hadn’t cooked a pork tenderloin in a very long time, so I had “warned” my Parents that there were no guarantees as to the outcome.

I decided to just simply bake it in the oven alone, so that I could use the leftovers to make barbecue.  The directions indicated the pork would cook in 30 to 35 minutes.  It did say to check the temperature with a thermometer to be sure it was done, but we didn’t need a thermometer to tell us it was no where near done in that time period.  I had made a boxed stuffing mix with added canned apples, as well as the Kroger mashed potatoes, so waiting was not a problem, since both could just be reheated in the microwave.  I had planned putting the crescent rolls in when the meat was done, so this posed no problem either.

It was well worth the wait – the pork truly was moist and tender, the mashed potatoes had a close to made from scratch taste.  The crescent rolls were a real surprise – truthfully we didn’t have high expectations for them, but they very flaky and tasty.  We chose to get devil’s food cake with milk chocolate icing with the desert coupons. My Dad loves Kroger brand brownies, so it came as no surprise that this was very moist and delicious. I’d challenge the equivalents of the major brands to a taste test anytime! Kroger dessert

I had quite a bit of pork left, so I decided to try to make pork barbecue out of it.  I just cut it into pieces and put it in the crock pot. I added a couple of small diced onions and a bottle of our hometown Montgomery Inn barbecue sauce and a small amount of brown sugar , then let it cook on low until bedtime.  I left it on warm overnight. We got some homestyle slaw from the Kroger deli and had this on buns with sides for a meal the next day. It was amazing! I think we liked it as well as the fresh cooked pork meal.

Kroger needs to take a look at those cooking directions on the pork and give a better estimate of how long to cook it.  Otherwise, I have no suggestions for making this better. We  shared the 20% off Kroger sides, rolls and cake and frosting coupons we were given with a couple family members and even gave a few to people in that aisle in the store. This made for several great family dinners for us!
